3/4 cup beef broth

2 tablespoons Worcestershire sauce

2 tablespoons cornstarch

6 cups hash brown potatoes, thawed


1. preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.

2. In a skillet over medium heat, cook the ground beef until browned. Drain off any excess grease.

3. Add the onion, carrots, garlic, thyme, salt, and pepper. Cook for 5 minutes.

4. Stir in the peas and cabbage. Pour in the beef broth and Worcestershire sauce. Bring to a boil.

5. In a small bowl, whisk together the cornstarch and water. Add this to the beef mixture and stir until thickened.

6. Spread the hash browns over the bottom of the prepared baking dish. Pour the beef mixture over top.

-1 pound of ground beef

-1 can enchilada sauce

-1 cup shredded cheddar cheese

-1 package of frozen corn

-1 package frozen hash browns


1. preheat the oven to 350 degrees F.

2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

3. Add the enchilada sauce and cheese to the skillet and stir until melted. Stir in the corn and hash browns.

4. Pour the mixture into a baking dish and bake for 25 minutes or until heated through. Serve immediately.

Lasagna Casserole


1 lb lean ground beef

1/2 cup chopped onion

1 garlic clove, minced

1 can (14-1/2 oz) diced tomatoes, undrained

1 can (8 oz) tomato sauce

1-1/2 teaspoons dried basil leaves

3/4 teaspoon salt

1/4 teaspoon black pepper

1 package (20 oz) frozen hash brown potatoes, thawed

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese


In a large skillet, cook ground beef over medium heat until no longer pink; drain. Add onion and garlic; cook until tender. Stir in tomatoes, tomato sauce, basil, salt, and pepper. Set aside.

In a greased 3-qt baking dish, spread one cup of beef mixture. Arrange half of the hash browns over beef; sprinkle with 1/4 cup Parmesan cheese. Repeat layering. Pour remaining beef mixture over top; sprinkle with remaining cheeses. Cover and bake at 350° for 45 minutes or until potatoes are tender and cheese is melted. Let stand for 10 minutes before serving. Yield: 8 servings (1-1/2 quarts).

Cheesy Potato Casserole


6 cups frozen shredded hash brown potatoes, thawed

1 can (10-3/4 oz) condensed cream of chicken soup, undiluted

1 carton (12 oz) of evaporated milk

1/2 cup butter, melted

3/4 teaspoon salt

1/4 teaspoon pepper

2 cups (8 oz) shredded cheddar cheese


In a large bowl, combine the first six ingredients. Pour into a greased 3-qt baking dish. Sprinkle with cheese. Bake, uncovered, at 325° for 30 minutes or until potatoes are tender and cheese is melted. Yield: 12 servings.
